Jim Victor makes a living playing with food.
"It's a lot of seriously demanding work," says the internationally known sculptor from Conshohocken, Pa., who can handle a mound of colorful vegetables just as aptly as a thousand pounds of butter.
"Nowadays," he says, "it's more profitable working with butter than anything else. Dairy farmers love me."
Victor had put in full-time hours almost daily since Christmas, working inside a temperature-controlled, refrigerated case in the main hall of the Pennsylvania Farm Show Complex and Expo Center in Harrisburg.
He worked in secrecy behind closed blinds, armed with handmade modeling and drywall tools, and assisted by his wife, Marie Pelton, also a sculptor.
The couple were working with 900 pounds of donated butter for Thursday morning's public unveiling of the 19th annual butter sculpture at the 2009 Pennsylvania Farm Show. The show will open to the public on Saturday and will run through Jan. 17.
This year's butter creation pays tribute to the Pennsylvania National Guard, which was first formed by Benjamin Franklin in 1747.
According to a news release Thursday by the Mid-Atlantic Dairy Association, a sponsor of the butter sculpture, Somerset County dairy farmer Tom Croner spoke at the unveiling as chair of the Pennsylvania Dairy Promotion Program.
"Dairy farmers have a long and proud involvement in the Pennsylvania National Guard," Croner said.
"When the Guard first formed, dairy farmers laid down their farming equipment and picked up weapons to fight for our freedom. Today, we salute the men and women who work diligently to protect us."
